Baklava Rolls

INGREDIENTS:

  • 6 sheets phyllo dough (one package weigh 1 pound and have 18 14 x 18 inches sheets)
  • 1/2 cup clarified butter
  • 1/2 cup ground almond
  • 1/2 cup ground walnuts
  • 1/4 cup coconut powder
  • 1/2 tsp cardamom powder
  • 1/3 cup sugar

For Syrup and Garnishing

  • 3/4 cup sugar
  • 1/2 cup water
  • 1 tsp lemon juice
  • 1 tbsp pistachios sliced

For baking I am using 8x8 baking pan.

 

 

Sooji ka Halwa

Ingredients:

 

  • 1/2 cup sooji rava, semolina
  • 2 Tbsp milk
  • 1/4 cup clarified butter ghee
  • 1/3 cup sugar
  • 1-1/2 cups water
  • 1/8 tsp cardamom powder ilachi
  • few strings saffron kaser
  • 1 Tbsp sliced pistachios pista

 

 

Rava Kesari (Kesari Halwa)

INGREDIENTS

 

 
  • 1 cup fine sooji semolina
  • 3/4 cup sugar
  • 4 Tbsp ghee clarified butter
  • 2 Tbsp sliced almonds
  • 8 drops yellow food color
  • Pinch of saffron kesar
  • 1/8 tsp cardamom crushed, ilachi
  • 3-1/3 cups water
  • 1 Tbsp sliced pistachios pista for garnishing

 

Paneer Petha Ka Ladoo

INGREDIENTS:

  • 1 cup Paneer homemade
  • 1 cup Petha shredded, sweet
  • ¼ tsp Green Cardamom powder
  • 1 Tbsp Pistachios sliced, for garnishing
 

Chocolate Sandesh (Truffles)

Ingredients:

  • 8 cups milk 1/2 gallon
  • 1/4 cup lemon juice
  • 1/2 cup sugar
  • 2 teaspoons coco powder

For Garnishing

  • 3 tablespoon semisweet chocolate chips
  • 2 tablespoon heavy cream
  • 2 tablespoons sliced pistachios

Custard Toast Bites (Sweet Brushetta)

INGREDIENTS:

  • 12 thin slices of French bread bruschetta or use the regular size bread and cut them to size you will like
  • 2 Tbsp melted butter
  • 1 ¼ cup milk
  • ¼ cup heavy cream
  • ¼ cup sugar
  • 1 ½ Tbsp corn starch
  • Pinch saffron
  • ? tsp cardamom powder
  • 1 Tbsp sliced almond for garnishing
  • 1 Tbsp sliced pistachios for garnishing

No Bake Cheesecake

INGREDIENTS:

  • 1 cup graham crackers fine crumbs, I used 12 gram crackers
  • 4 Tbsp unsalted butter at room temperature
  • 8 oz cream cheese at room temperature
  • 1/3 cup sugar
  • 1/2 cup heavy cream chilled
  • 1 tsp lemon juice
  • Few slices of fresh fruit of your choice I am using, mango, kiwi, strawberry, and few black berry

 

 

Mango Mousse with raspberry pearls

INGREDIENTS

 

 For Mousse

  • 2 cup Mango pulp
  • 1/2 tsp lemon juice
  • 1/4 cup fine sugar
  • 2 1/2 tsp Agar-Agar
  • 1/4 cup water
  • 3/4 cup whipping cream

For Raspberry Pearls

  • 2 cups fresh raspberries
  • 2 Tbsp sugar
  • 1 Tbsp lemon juice
  • 1 1/4 tsp agar-agar powder
  • 1/2 cup oil

 

Mango Panna Cotta

Ingredients:

for Cream Layer

  • 1 can (14 oz) coconut milk unsweetened
  • 1/4 cup sugar
  • 1teaspoon vanilla extract
  • 1-1/2 teaspoon agar-agar

for Mango Layer

  • 1-1/2 cup mango puree, (I used 1-1/2 mango, mango should not be over ripe)
  • 2 teaspoons lemon juice
  • 1/4 cup sugar use as needed depend on sweetness of mango
  • 1-1/2 teaspoon agar-agar

Til Ka Ladoo – Sesame Candy

Ingredients:

  • 1 cup sesame seeds, til
  • 1 cup jaggery or gur broken in small pieces, available at Indian grocery store
  • 3 tablespoons clarified butter, ghee
  • 1/2 teaspoon crushed cardamom
  • 1/2 cup water

 

 

Coconut Dream Dessert

Ingredients:

 

  • 1 cup coconut milk
  • 2 cup soy milk
  • ¾ cup sugar
  • 2 teaspoons agar-agar powder, available in Indian and Asian grocery stores
  • ¼ teaspoon cardamom crushed
  • ¼ cup coconut shredded
  • Approx. 20 crushed pistachios
  • Pinch of saffron crushed

 

Mawa Kachori (Puffed Pastry)

Ingredients:

Crust

  • 1cup all-purpose flour (maida, plain flour)
  • 2 tablespoons clarified butter (ghee)
  • Approx. 1/2 cup of lukewarm water as needed

Filling

  • 1/2 cup heavy cream or whipping cream
  • 1 cup milk powder
  • 1/4 cup mixed nuts (almonds, pistachios coarsely ground)
  • 1/4 teaspoon crushed cardamom
  • 3 tablespoon sugar
  • Few strands of saffron

Chiroti (Khaja)

Ingredients:

 

  • 1 cup all-purpose flour, maida, plain flour
  • 2 tablespoons clarified melted butter, ghee
  • Pinch of salt
  • ½ cup cold water
  • We also need 2 tablespoons all-purpose flour and 2 tablespoons of melted clarified butter to make paste

Oil to fry

For syrup

  • 3/4 cups of sugar
  • 1/3 cup of water
  • 1/4 teaspoon crushed cardamom seeds

Biscuit Cream Pudding

Ingredients:

 

  • Heavy cream -150 ml
  • Milk Biscuits -15-20 biscuits
  • Sugar -4-5 tbspns
  • Vanilla essence -1/2 tsp
  • Instant coffee powder -1 tsp
  • Water -3/4 cup

 

Cantaloupe Rice Pudding

Ingredients:

  • 1/4 Cup Rice
  • 3 Cups Milk
  • 1 Tbsp Almonds, blanched
  • 1/4 Cup Thick puréed cantaloupe
  • ~1/4 Cup Sugar
  • 1/8 Tsp Cinnamon powder
  • 1 Tbsp Chopped cashew nuts / Pecans

Chum Chum

INGREDIENTS:

  • 4 cups whole milk, paneer
  • 2 cups sugar
  • 5 cups water
  • 1/8 tsp cardamom powder

Ingredients for different For Different Garnishing

  • 1 tbs pistachio
  • 1 tbs coconut powder

Butternut Squash & Almond Baked Crumble

Ingredients:

For the base:

  • Olive oil
  • 500g leeks, sliced
  • 750g – 1kg butternut squash, chopped into bitesized pieces
  • 1tsp chopped fresh rosemary
  • 2 tsp of dried thyme
  • 400g tinned chopped tomatoes
  • ½ lemon, juiced
  • 400mls vegetable stock
  • Salt and pepper

For the crumble:

  • 100g wholmeal flour
  • 50g rolled oats (copos de avena)
  • 50g ground almonds
  • 1 tsp of dried thyme
  • 75g of butter (room temperature)
  • handful of chopped almonds
  • Salt and pepper

Double-Decker Burfi (Apple coconut and Pineapple Burfi)

Ingredients:

for Apple Coconut layer

  • 2 Red Apples (Roughly grated)
  • 1/4 Cup Grated Coconut (Packed)
  • drop of Coconut extract (Optional)
  • pinch of Red food color (Optional)
  • 1/2 Cup Sugar

for Pineapple layer

  • Crushed Pineapple – 1 Cup
  • Milk powder – 1/2 Cup ( Packed)
  • Pineapple extract – a drop (Optional)
  • Yellow color – a pinch (Optional)
  • Sugar – 1/2 Cup

Lachha Rabdi

Ingredients:

 

  • 4 cups Milk
  • 3-4 tablespoon Sugar (sweetness as per taste)
  • 1/4 teaspoon Cardamom powder
  • 1/4 teaspoon Saffron
  • 2 tablespoon chopped almonds & pistachios
